COLUMN | Seasonal options from the Fish GUY – plus enjoy seafood and sundowners on the terraces for The Open

West Kirby Today’s monthly columnist, Guy Lawrenson, is the proprietor of the hugely popular Seafood Shack on Dee Lane. Guy previously owned the What’s Cooking restaurant chain and earned his seafood stripes during lockdown by working at the renowned Bricklands Fish & Game in Chester and for national wholesaler Big Fish Little Fish, who own Bricklands amongst other fishmongers.

July offers a variety of delicious seasonal fish options – here are some popular choices along with cooking tips:

Mackerel: Abundant during the summer months. It has a rich, oily flavour and is excellent for grilling, baking, or pan-frying. To enhance its taste, try marinating the fish with lemon juice, olive oil, and herbs before cooking.

Wild local Sea Bass: A delicate and flavourful fish. It can be grilled whole, filleted and pan-fried, or baked. For a simple yet tasty preparation, season the fish with salt, pepper, and lemon zest before grilling or frying – best cooked whole and on the BBQ!

Dover Sole: A prized flatfish with a sweet flavour. It is commonly pan-fried in butter to create a crispy exterior while keeping the flesh moist and tender. Serve it with a squeeze of lemon juice and some fresh herbs – special pre-order ONLY.

Plaice: Another flatfish that is widely available during the summer. It has a delicate flavour and a firm texture, making it suitable for grilling, baking, or pan-frying. Coat the fillets with breadcrumbs or a light batter for a tasty crispy finish.

Rainbow Trout: They have a slightly nutty flavour and can be cooked in various ways such as grilling, baking, or pan-frying. Stuff the trout with herbs and lemon slices before grilling or baking for added flavour.

Herring: A small oily fish packed with omega-3 fatty acids. It is commonly pickled or smoked but can also be grilled or pan-fried. Serve grilled herring with a zesty sauce or pair our sweet or luxury herring with fresh bread and cream cheese for a traditional treat.

Crab: Fresh-dressed Holderness Coast crab – served in the shell. Cooked and ready to eat – delicious in a salad or sandwich.

We are extending the terrace to 40 seats for The Open, from 6-8pm only, serving seafood sharing platters and grilled lobster.

PS: The terrace outside the Shack is open from 10am.
