Yasmin Limbert from West Kirby showed off her brilliant baking skills on the second series of The Great British Bake Off and is our Christmas cookery columnist.

Following on from her Christmas cake recipe, here is her latest festive recommendation.

Mince Pie Slice

This is a great alternative to mince pies. Instead of pastry it has a base quite similar to shortbread – and it’s pretty easy to make!

I always have some in a tin ready for unexpected visitors to accompany a cup of tea, but I have also been known to serve it straight from the oven with a dollop of ice cream.

Ingredients

250g Self Raising Flour

225g Butter/Margarine

50g Soft Brown Sugar

2 tsp Mixed Spice

400g Mincemeat

30g Flaked Almonds

Method

Line a 28 x 18cm baking tin with parchment and preheat the oven to 160C Fan/350F/ Gas Mark 4.

Put the flour, butter, sugar and spice into a mixing bowl and mix till well combined.

Divide the mixture in two and press one half into the base of your baking tray until evenly covered. Now spread the mincemeat over the base.

Using a large size grater, grate the remaining dough over the the mincemeat, Lastly, sprinkle on the flaked almonds.

Bake for 30-35 minutes till firm and golden. Leave it to cool in the tin then dust with icing sugar before slicing.
