Meet our new columnist: The Fish GUY

West Kirby Today is delighted to introduce our new monthly columnist, Guy Lawrenson, proprietor of the hugely popular Seafood Shack on Dee Lane. Guy previously owned the What’s Cooking restaurant chain and earned his seafood stripes during lockdown by working at the renowned Bricklands Fish & Game in Chester and for national wholesaler Big Fish Little Fish, who own Bricklands amongst other fishmongers.

The great thing about fish is that there’s so much variety – in flavour, size and cost.

As long as it’s fresh, it’s good.

As well as tasting good, seafood can play an important part of a healthy, balanced diet. It is high in protein, packed with vitamins and minerals and oily fish is rich in omega-3 fats.

It’s recommended that a healthy, balanced diet should include at least 2 portions of fish a week, one of which should be an oily fish.

So, if you want to push the boat out, wild turbot, brill, halibut, sea bass, dover & lemon soles, lobster and langoustines feature regularly on the counter.

Seasonal varieties such as mackerel, rainbow trout, pollock, ling, stone bass, cod cheeks, haddock and mussels are great value for money.

Fresh fish can be done on a budget and with the right advice you are good to go…

BUT are you wary of buying fish because you’re not sure how to prepare it?

Have a gander at these healthy cooking methods:

Poaching – keeps fish moist, perfect for white fish such as Halibut, Sole, Cod, Haddock, Hake.

Grilling – oily fish, including salmon, trout, swordfish and tuna, tend to have a strong flavour and meaty texture which makes them perfect for grilling.

Baking – placing fish in a foil parcel helps to keep it tender and moist, which works well for both oily fish and white fish like salmon, whole bass or bream.

Shellfish – like king prawns, crevettes, clams and mussels cook quickly, hold their shape and are great in a stir-fry or pasta dishes

Air fryers – offer a healthy and economical method of cooking for all types of fish.
