West Kirby Today’s monthly columnist, Guy Lawrenson, is the proprietor of the hugely popular Seafood Shack on Dee Lane. Guy previously owned the What’s Cooking restaurant chain and earned his seafood stripes during lockdown by working at the renowned Bricklands Fish & Game in Chester and for national wholesaler Big Fish Little Fish, who own Bricklands amongst other fishmongers.

April is a great month to enjoy fresh seasonal fish from Cornwall and Scotland.

With the arrival of spring, a variety of delicious and sustainable fish species become available, making it the perfect time to explore new recipes and cooking techniques.

Here are some of the most popular…

Cornish Sardines – A staple of Cornish cuisine, and they are at their best during April. These small but flavourful fish are rich in omega-3 fatty acids and are a great source of protein. They can be grilled, baked, or fried, served with a simple salad or some of our Sour Dough bread.

Scottish Salmon – Prized for its rich, buttery flavour and firm texture. It is an excellent source of protein, omega-3 fatty acids, and vitamin D. Scottish salmon can be cooked in a variety of ways, including grilling, baking, or poaching. It pairs well with fresh herbs, lemon, and our homemade shack butter.

Our Sashimi grade Salmon is perfect for Sushi – we have a good selection of Soy, Nori, Inari, Sushi rice and seasoning too.

Cornish Mackerel – Mackerel is a popular fish in Cornwall, and it is at its peak in April. This oily fish is rich in omega-3 fatty acids and has a distinct, rich flavour. They can be grilled, baked, or smoked, great with our Jazzy new potatoes or some Jersey Royals.

Scottish Langoustines – Langoustines, also known as Dublin Bay prawns, are a delicacy in Scotland. They have a sweet, delicate flavour and firm texture, and are often compared to lobster. Grilled, roasted, or boiled, often served with a simple lemon and garlic butter sauce.

Cornish Crab – April marks the start of the crab season in Cornwall, and fresh, sweet crab meat is widely available. Crab meat can be used in a variety of dishes, including salads, sandwiches, and pasta dishes. It pairs well with fresh herbs, (Wirral watercress, wild garlic & roquette in store this month) lemon, and my favourite mayonnaise.

Whether you’re a fan of sardines, salmon, mackerel, langoustines, or crab, there are plenty of delicious and sustainable options to explore.

With some simple techniques and high-quality ingredients, you can enjoy a delicious seafood feast that will impress your friends and family.
