COLUMN | Eat like Spanish ‘Royalty’ this Christmas at BoBo

Steven Burgess and Josh Moore opened BoBo in West Kirby in August 2023, a restaurant that celebrates Iberian food and beverage, in particular that of Portugal and Spain. In their regular column, the former AA rosette chefs, turned hospitality specialists, discuss their passion for Portuguese and Spanish cuisine and the history behind some of the peninsula’s iconic dishes and drinks.

Food is a big deal in Spanish culture any time of the year but around Christmas it becomes even more important when family feasting is the order of the day.

The real Christmas celebration for many in Spain is January 6th, the Christian feast day of Epiphany celebrating the visit of the Magi (the Three Kings/Wise Men) to the baby Jesus. It is sometimes called Three Kings’ Day, and in some traditions celebrated as ‘Little Christmas’, as is the case in Spain where Dia de Los Magos is a public holiday marking the end of the Christmas season and the day for giving presents to children.

On every Spanish table is the famous Roscón de Reyes, the traditional Spanish Kings’ cake typically eaten during the celebrations. It’s a sweet yeasted, oval shaped brioche type bread decorated with candied fruits, dried dates and other sweet colourful toppings representing the jewelled crowns worn by the Three Kings. The cake can be served plain, but usually it’s sliced in half and sandwiches a layer of sweet, whipped cream. It’s delicious, especially if you find the treat hidden inside which dubs you the king or queen of the festival.

Then there’s our Christmas Patatas Bravas with cranberry tomato sauce and black pepper alioli (trust us, it is amazing!) and Turkey Albondigas and lots more before you indulge in sweet Spanish passions – firstly, our take on the aforementioned Roscón de Reyes and secondly, hot chocolate fondants with tangerine sauce.
