West Kirby Today’s monthly columnist, Guy Lawrenson, is the proprietor of the hugely popular Seafood Shack on Dee Lane. Guy previously owned the What’s Cooking restaurant chain and earned his seafood stripes during lockdown by working at the renowned Bricklands Fish & Game in Chester and for national wholesaler Big Fish Little Fish, who own Bricklands amongst other fishmongers.

August is a great time to barbecue a variety of fish that are in season.

With the promise of better weather this month – fire up the BBQ!

Try some of these regional goodies…

Mackerel: Mackerel is abundant during August and is perfect for grilling. Its rich flavour stands up well to the heat of the barbecue. Simply brush the mackerel with a marinade of olive oil, lemon juice, garlic, and herbs before grilling for a few minutes on each side.

Sea Bass: We have a regular supply of local wild bass – not the cheapest on the counter – but tastes terrific. Season it with olive oil, salt, and pepper, and perhaps stuff the cavity with fresh herbs and lemon slices before grilling – always cook it whole

Sardines: Sardines are small, flavourful fish that are fantastic on the barbecue. Brush them with olive oil, sprinkle with salt, and grill for a short time on each side. The skin becomes crispy, and the flesh becomes tender and very tasty.

Swordfish: In a bowl, whisk together olive oil, paprika, cayenne pepper, ground cumin, garlic powder, salt, and black pepper and pop in a bag for ½ hour – grill both sides – let it rest enjoy!

Salmon: Sushi grade Scottish salmon very versatile always a winner – takes lots of flavours and never disappoints A glaze made from honey, soy sauce, and ginger can add a delicious twist.

Shrimp/crevettes – great choice of shell on varieties Ecuadorian, Argentinian, Wild Nigerian or our best sellers de veined tail on king prawns – just plain or skewered with a Thai marinade

Pair your grilled fish with fresh salads, grilled vegetables, our Cornish potato salad and sriracha slaw – chuck in some sour dough bread and shack butter. Or drizzle n dip with Charlie & Ivy’s dipping oils
